Tsi-La: Cooking Fresh!

I love cooking. I love it even more when I am able to use fresh ingredients from my garden. This time of year is the perfect time for making fresh tomato sauce, so here is my fav recipe!


15 – 20 fresh plum tomatoes
1 onion, finely chopped
4 cloves garlic, finely chopped
Fresh Basil leaves chopped (to taste)
1/3 cup of extra-virgin olive oil
Pinch crushed red pepper
Pinch of paprika
Pinch of Kosher salt

Score the skin of each tomato with a sharp knife. Then, place scored tomatoes into a pot of boiling water and boil for approximately 1 1/2 minutes. Remove tomatoes and plunge into cold water. Let cool. Next…

Heat the olive oil in a saucepan. When hot, add garlic, a pinch of paprika and the crushed red pepper. Add the chopped onion and sautΓ© the onions until they are translucent. Finally…

Add the plum tomatoes (after crushing them by hand) and allow the sauce to simmer for approximately 10 -15 minutes. Add salt, chopped basil and extra virgin olive oil to taste.
